Rhubarb Juice Recipes

Rhubarb Juice 1
Ingredients:

450 g rhubarb, cut into 5 mm dice
1 tbsp lemon juice
100 g granulated sugar
300 ml water

Instructions:
Combine the rhubarb, lemon juice, water and sugar in a blender. Process until you have a coarse purée then pour into a fine-meshed sieve. Press through the sieve with the back of a wooden spoon or your hands to extract as much of the liquid from the rhubarb as possible. Squeeze the remaining rhubarb pulp to extract any left over juice then discard. Place the rhubarb juice in the refrigerator to chill before use.
Rhubarb Juice 2
Ingredients:

8 pounds rhubarb, diced
8 quarts water
2 (12-ounce) cans of frozen orange juice
2 (46-ounce) cans of pineapple juice
4 cups sugar
2 (3-ounce) boxes strawberry gelatin
Instructions:
Combine rhubarb and water and cook until rhubarb is soft. Drain, discarding rhubarb, and add the rest of ingredients to the juice. Stir until sugar is dissolved. Put hot juice into jars, seal and cold pack for five minutes.

Rhubarb Juice 3
Ingredients:

6 c. chopped up rhubarb
1 1/2 c. sugar
4 c. boiling water

1 c. orange juice
Instructions:
Mix rhubarb and sugar and let stand for 4 hours. Pour boiling water over rhubarb and sugar and let stand for a little while. Drain rhubarb and save juice. Add orange juice to rhubarb juice. Ready to serve. Makes 1 quart.
