Blackberry or Boysenberry Liqueur Recipes |

Blackberry Liqueur 1 Ingredients: 1 lb. (450 g) fresh Blackberries 3 cups (710 ml) vodka or 1 1/2 cup pure grain alcohol + 1 1/2 cup water 1 1/2 cup (350 g) sugar Instructions: Rinse and check the Blackberries and place them in a jar, add vodka and mix. Stir daily during the first days, later at least once a week for 3-4 weeks. Filter the mixture of berries and alcohol and transfer the liquid to a bottle. Add sugar and shake until dissolved. After three months strain the liqueur thru a cloth. Add some more sugar if necessary. The liqueur should mellow for at least 6 months before drinking, preferably for 12 months. |

Blackberry Liqueur 2 Ingredients: 2 cups fresh or frozen blackberries 1 cup sugar 1 cup 80-proof vodka 1 cup brandy 1 cup standard sugar syrup 1 tsp lemon zest 1 tbsp fresh squeezed lemon juice 100-proof vodka Instructions: If frozen berries are used, measure them while still frozen, because in a thawed state, they will shrink to about half the volume. Put berries and sugar in 2 Qt. Mason jar, then crush berries with a wooden spoon, then let the mixture stand to allow juice to develop. After one hour add the vodka and brandy, then shake the mixture thoroughly until all the sugar is dissolved. Add the sugar syrup, then add the lemon juice and lemon zest. Macerate at room temperature for 2 weeks. Strain and filter. Blend with 100 proof vodka to taste (about 8 parts strained and filtered liqueur to 1 part 100 proof vodka). |

Blackberry Liqueur 3 Ingredients: 1 1/2 cups sugar 1 cup water 4 cups blackberry 1 1/2 cups vodka Instructions: Put sugar,water and berries together in a heavy pot and simmer till sugar is disolved and liquid starts to thicken.strain to remove seeds. I use a big mesh strainer and the back of a wooden spoon. Let it cool. add vodka an let stand covered for 2-4 weeks the longer the better. In winter try with chopped dried apricots. |

Blackberry Liqueur 4 Ingredients: 2 cups fresh blackberries, picked over and washed 1 cup sugar 1 cup 100-proof vodka 1 cup brandy 1 cup light corn syrup 1 teaspoon lemon zest 1 tablespoon fresh squeezed lemon juice Instructions: Put berries and sugar in vessel. Crush berries, let stand for one hour. Add vodka and brandy, cap, shake vigorously. Add corn syrup, lemon juice, lemon zest. Steep in cool, dark place for 2 weeks. Strain and filter. Stand 1 week, strain and filter again. Age one month. |
