Raspberry Liqueur 1 Ingredients: 1 lb. (450 g) fresh Raspberries 3 cups (710 ml) vodka or 1 1/2 cup pure grain alcohol + 1 1/2 cup water 1 1/2 cup (350 g) sugar Instructions: Rinse and check the Raspberries and place them in a jar, add vodka and mix. Stir daily during the first days, later at least once a week for 3-4 weeks. Filter the mixture of berries and alcohol and transfer the liquid to a bottle. Add sugar and shake until dissolved. After three months strain the liqueur thru a cloth. Add some more sugar if necessary. The liqueur should mellow for at least 6 months before drinking, preferably for 12 months. |

Raspberry Liqueur 2 Ingredients: 300 g/10 oz Golden Caster sugar 300 g/10 oz ripe raspberries 1 standard bottle gin 600 ml/1 pint hot (boiled) water Instructions: Place the raspberries in a sterilised jar and pour on the gin. Seal tightly and leave in a warm place for 1 week, shaking the jar every day. Dissolve the sugar in the hot water until completely dissolved and leave to cool. Strain the raspberry gin through a fine strainer or coffee filter paper onto the cool syrup and stir well. Pour through a funnel into 2 bottles. Seal tightly and label. Store for a few weeks before drinking. |

Raspberry Liqueur 3 Ingredients: 1 pt Fresh raspberries 2 1/2 c Vodka 1 Vanilla bean 1/4 ts Whole allspice 1/2 c Sugar Syrup Instructions: Select full colored and plumb berries, avoiding stained baskets (sign of overripe or softened and decayed berries). Season is May to July. Do not wash until ready to use as water causes mold to form. Rinse berries and place in a mixing bowl, lightly crushing to release flavor. Add vodka, vanilla bean, and allspice. Stir and store in bottle in cool dark place for 3 weeks. Strain mixture through dampened cheesecloth squeezing as much juice as possible. Pour back into bottle adding sugar syrup to taste (1/3 to 1/2 cup per pint) and age another 3-5 weeks. |

Raspberry Liqueur 4 Ingredients: 4 cups raspberries clean, dry 4 cups brandy 2 cups sugar 1/2 cup water Instructions: Put the raspberries into a jar and cover with the brandy. Seal and store on sunny windowsill for 2 months. Put the sugar in a saucepan with the sugar and heat only enough to dissolve the sugar. Pour the syrup onto the raspberry liqueur. Strain and bottle. |

Raspberry Cordial Liqueur Ingredients: 1 cup ripe raspberries 2 cups brandy 3/4 cups sugar syrup Instructions: Place the raspberries in a jar and cover them with the brandy, making sure the raspberries are completely covered. If needed add more brandy to cover the raspberries. Seal the jar and shake. After one week strain the liquid and mash the raspberries to get as much liquid from them as possible. Strain and add the sugar syrup. |

Cran-Raspberry Liqueur Ingredients: 2 c Frozen whole raspberries 2 c Fresh whole cranberries 2 c Granulated sugar 1 tb Lemon juice 2 c Vodka Instructions: In 2-quart glass jar with lid, combine raspberries, cranberries, sugar, lemon juice and vodka; stir until sugar is dissolved. Cover tightly with lid. Allow to stand at room temperature 2 weeks, inverting jar every day. Strain through cheesecloth. Pour into decorative bottles; cap tightly. |
